Gluten-Free Protein Millionaire Shortbread

INGREDIENTS 

Shortbread Layer 

✔  1 ¼ cup of coconut flour

✔ ¾ cup of pure maple syrup 

✔ ½ cup of coconut oil melted 

✔ 1 scoop of Vanilla QuiAri Shake 

✔ ¼ teaspoon of sea salt 

Caramel Layer

✔ 1 cup of pitted dates 

✔ 2 tablespoons of almond butter 

✔ ¼ cup of pure maple syrup 

✔ ¼ cup of coconut milk

✔ 1 pinch of sea salt 

✔ 1 teaspoon of vanilla extract 

Chocolate Layer 

✔ 1 cup of dark chocolate chips

✔ 3 tablespoons of coconut oil 

✔ 1 pinch of sea salt 

DIRECTIONS 

Shortbread Layer 

  1. Mix all the ingredients for the shortbread in a mixing bowl. 

  2. Spread all the mixture onto the bottom of the prepared pan. Put it in the fridge for about fifteen minutes while you mix the next layer. 

“Caramel” Layer

  1. Prepare this next layer by blending all the ingredients for the “caramel” layer in a high-powered blender. 

  2. Spread the mixture onto the prepared shortbread layer that was in the fridge and put it back in for another 15 minutes. 

Chocolate Layer 

  1. Melt the chocolate chips, coconut oil, and sea salt using a double boiler. 

  2. Then remove from heat and allow the chocolate mixture to cool for about 5 minutes before putting the chocolate layer onto the prepared pan that was in the fridge. 

  3. Finally, put the entire pan with the 3 layers onto the fridge for another 20-30 minutes. Remove the bars from the pan, cut them into squares, and enjoy!
